鐵觀音要求色香形皆佳。尤似彎曲螺狀外形與自然香味為特色,但諸因子是相互依賴和互為襯托的。鐵觀音干看審評的技巧也在於此。從外形可以大略了解內質,初步判斷等級。但為了慎重和準確,必須開湯審評,尤其是高級茶,試驗茶葉,商品茶等都強調開湯審,評後,才能定級定價。


早期的鐵觀音是一葉一葉包起來做成一粒粒的,外形以圓緊為上乘。但這產量很低!後面隨著機器的代工,半人工半機器,外形可以慢慢的掌控早做成什麼樣子的!現在的茶葉,手工出來的,外形一般比較拋,但色澤髮油亮,不捂,不暗淡,如果外形很均勻,很有規則,一般很多不是安溪當地出來的茶葉,是與安溪交界的一些地方用機器壓出來的「鐵觀音」,外形好看但不耐泡!
